Well done Ally that is exactly right and that is what the exposure compensation is for good for snow and that stuff as well there is also another way to do it as well if you use your camera on manual mode using the set your exposure for a neutral color easiest is the green in the grass and plants then compose your shot and the whites should be 1 to 2 exposure levels over the grass but not overexposed to where they are blown out so if you use manual set exposure on the grass or neutral color then check the hilights to make sure they are not going to blow out compose your shot then shoot.
BTW ally that is a great shot of that Egret well done
