Excuse me if my answer is long-winded, but I think it's to the point.
Kiwi is absolutely right that SLR equipment and a good 400mm lens would be ideal. But I want to point out (in the friendliest possible way, because I think the world of Kiwi) that the question was which point-and-shoot camera would be a good one to get started ...

Yes, Townsend's Solitaires.
I made the same mistake the first time I spotted one.
In Winter they come down from higher altitudes looking for food (like juniper berries).
